After conducting a number of tests, we determined the crucial ingredients to be garlic, fresh basil, olive oil, salt, and sugar. We discovered that a garlic puree, diluted with water and sautéed briefly in olive oil, provided a mild, even garlic flavor while greatly reducing the possibility of overcooking the garlic. I can finally cook my own salmon: I only used 1/2 tbsp butter, one sprig of rosemary, and I used 2 lemon "wedges" not slices on top. If you watched the show you know some ingredients were left out of the recipe, so I added them. I "added" garlic powder & a litte ground sage to both sides. I also "added" a sprig of thyme on top. Recipe courtesy of Michele Urvater Save Recipe Print Pinterest Facebook Twitter Email Total: 35 min Prep: 5 min Cook: 30 min Yield: 4 servings Ingredients 1 pound fusilli pasta 1 pound broccoli rabe, trimmed and cut into 1-inch pieces For the Sauce: 1/2 cup olive oil 1/2 cup minced shallots 1 clove garlic, minced 6-8 ounces Shiitake mushrooms, trimmed and sliced 1 6-8 ounce piece of Prosciutto or similar cured ham, cut into small dice or strips 1/2-1 teaspoon dried hot red pepper flakes to taste 1/3 cup chicken stock or broth 2 tablespoons minced fresh parsley 2 tablespoons minced fresh chives 2 tablespoons fresh tarragon Freshly grated Parmesan cheese, optional garnish Sundried tomatoes, optional garnish Add Checked Items to Grocery List Success! Ingredients have been added to your Grocery List and the recipe has been saved. View List Directions First make the sauce. In a skillet heat oil. Add shallots and cook, stirring for 1 minute. Then add mushrooms and cook, stirring occasionally for 5 minutes, or until mushrooms are lightly golden. Now stir in garlic, prosciutto, and red pepper flakes and cook for 30 minutes, and then add chicken stock or broth and simmer for 1 minute. To your pasta, bring a large pot of water to a full rolling boil. When the water is ready, add your pasta. Remember start your cooking time when the water returns to a boil, not when you add the pasta. Cook your pasta according to package directions, after 6 minutes of cooking, add the broccoli rabe to the cooking pasta. Drain pasta and broccoli rabe in a colander and transfer to a serving dish. Top with sauce, mixing well. Garnish if desired. Notes: Collard greens braised to melting softness in the Southern style (slow-simmered with plenty of pork) are truly delicious, but the greens don't actually have to cook for hours. In twenty minutes they'll be just tender. Wine Recommendation: The robust flavors of Hoppin' John call for an equally assertive wine. Go for a brash, full-bodied red zinfandel from California. Its spicy blackberry richness is easily up to the task. View List Directions In a large glass or stainless steel container, mix salt into water, stirring thoroughly until dissolved. With wire-mesh deep frying basket or other 1/4-inch metal screen, gently separate eggs from egg sack over bowl, by rubbing sack along screen. Take care not to scrape membrane from the egg sack, even if it means leaving some eggs behind. Pour brine mixture over eggs and allow to soak 12 minutes, stirring occasionally. (Soaking times for other salmon species: Sockeye or Red: 6 minutes; Pink or Humpy: 8 minutes; Coho or Silver: 10 minutes; King or Chinook: 14 minutes). While eggs soak, use tweezers to remove bits of membrane and broken eggshells. When soaking is complete, pour eggs into colander to drain. Rinse eggs quickly with cold water and drain for a few minutes. Cover colander with plastic wrap, place over bowl, allowing it to continue draining in refrigerator. After 8 to 12 hours, transfer the now-sticky eggs into glass bowl. Gently fold in just enough olive oil to make the individual eggs shiny and slick. Serving Suggestions: Salmon or red caviar prepared this way is much less salty than the commercial variety, allowing the sweet flavor of the fresh roe to emerge. Because of the lower salt levels however, it should be refrigerated and consumed within 3 to 4 days. Its mild flavor lends itself to serving with cream cheese and crackers. A traditional favorite is salmon caviar atop celery sticks stuffed with cream cheese. Salmon caviar is delightful when added to salads with creamy herb or ranch-style dressing. Meanwhile, rinse and trim fennel, discarding stems but reserving fronds and bulbs. Set aside half the fronds. Chop remaining fronds; set aside. Add fennel bulbs to boiling water and cook 10 minutes. Using slotted spoon, remove fennel bulbs. Dice bulbs and set aside. Return water to a boil and add pasta; stir to prevent sticking. Cook until tender, about 6 minutes. Drain pasta, reserving 1/2 cup cooking water. While pasta is cooking, in large skillet, heat 1 tablespoon oil over low heat.
