After chilling the chocolate base in the frig it helps to have a bowl of hot water to dip the melon ball scooper in. If the chocolate gets too cold scooping can be difficult. The melted milk chocolate (for the coating) needed some condensed milk to make it smooth. I also added a little warm milk. When it was finally at the ideal consistency I used a bamboo skewer to dip the truffles into the chocolate. I held a fork under it to detach the truffle and place it on parchment paper. The salt wouldn't stick, even when I sprinkled it immediately. When I finally got the method down the truffles looked great, but it's labor intensive. They taste great though. Cook until barely golden. Remove from heat and add scallions, cilantro leaves, lime juice and honey. Remove the whole "eye" from each rack, reserving the bones. Marinate for 2 hours or more, refrigerated. Preheat oven to 400 degrees F. In a shallow roasting pan, combine all the ingredients for the romesco sauce: olive oil, the remaining 2 ancho chiles, serrano or jalapeno, red pepper, shallots, garlic, tomato, tomato juice, saffron, cumin, coriander, basil and parsley. Roast for 40 minutes or until the tomatoes start to brown. Remove from the oven and process in a food processor, along with the toasted almonds. Add lime juice and salt and pepper to adjust the seasoning. Slice apart the reserved rib bones into 7 or 8 pieces equally so that each bone has the same amount of meat. Return sauce to the roasting pan and add rib bones. Loosely cover with foil. Roast at 350 degrees F for 1 hour. Test to see if the bone meat is tender by poking it with the tip of a sharp knife. When the meat is tender, remove the foil cover to let the meat brown slightly. Dry the "eyes" of each rack by scraping away the marinade. Do not discard. Add salt and pepper to the "eyes" and brown in a large saute pan. When the "eyes" have browned, place in a shallow roasting pan, pour over the reserved marinade, and roast in a slow oven at 325 degrees F. until cooked to medium rare. Let them rest. Slice each into 6 equal rounds. Place three rounds, overlapping, on each serving plate, and arrange 3 or 4 rib bones next to them Ladle some of the sauce around the plate. Serve immediately. Total Time: 0:40 Prep: 0:20 Level: Moderate Serves: 12 Ingredients nonstick cooking spray 7 graham crackers 3 tbsp. fresh lemon juice 2¼ tsp. powdered gelatin (from one 1/4-ounce packet) 5 c. fresh raspberries ½ c. sugar 2 tbsp. sugar 2 c. cold heavy cream Directions Lightly coat a 9-inch square metal baking pan with cooking spray and line with parchment paper, leaving a 2-inch overhang on all sides. Arrange graham crackers in an even layer in pan, breaking them to fit as necessary. Place lemon juice in a small bowl and sprinkle with gelatin. Let sit until gelatin softens, 3 minutes. In a blender, puree 2 cups raspberries until smooth, scraping down bowl as needed. Pour through a fine-mesh sieve into a measuring cup, pressing on solids (you should have about 1 cup of puree); discard solids. In a small saucepan, combine raspberry puree and 1/2 cup sugar over medium. Cook until bubbles form at edge. Add gelatin mixture and cook, stirring constantly, just until gelatin dissolves, about 1 minute. Transfer mixture to a small bowl and let cool to room temperature, 20 minutes. In a large bowl, using an electric mixer, beat cream and 2 tablespoons sugar on medium-high until firm peaks form, about 4 minutes. With a rubber spatula, gently fold in raspberry puree mixture until combined. Pour over graham crackers. Smooth top with an offset spatula and arrange 3 cups raspberries on top. Refrigerate until set, about 2 hours (or up to overnight). Using parchment, gently lift pie out of pan and place on a serving plate. Peel away parchment from sides of pie; trim excess paper with scissors or a sharp knife. Cut into 12 pieces to serve. Recipe courtesy of Sunny Anderson Show: Cooking for Real Episode: Wonton be Startin' Something Save Recipe Print Pinterest Facebook Twitter Email WATCH Pork-Fried Dirty Rice (03:09) Total: 25 min Prep: 10 min Cook: 15 min Yield: 4 to 6 servings Level: Easy Total: 25 min Prep: 10 min Cook: 15 min Yield: 4 to 6 servings Level: Easy Ingredients 2 tablespoons vegetable or peanut oil 1/2 pound ground pork 1 teaspoon kosher salt 1/2 teaspoon minced fresh ginger 2 cloves garlic, minced 2 scallions, chopped 1 lightly packed cup bean sprouts 1 cup frozen peas, thawed 1 1/2 cups day old Right Rice, recipe follows 2 teaspoons soy sauce, plus more to taste 1 tablespoon chili sauce (recommended: Sriracha) 2 eggs, beaten Right Rice: 1 1/2 cups Carolina rice Water, for rinsing and cooking Add Checked Items to Grocery List Success! Ingredients have been added to your Grocery List and the recipe has been saved. View List Directions Watch how to make this recipe. In a large nonstick saute pan or wok, heat the oil over high heat. When the oil begins to swirl, add the ground pork, salt and ginger. Break the pork up with a spoon and stir while browning. When the pork is cooked through and golden, add the garlic, scallions, bean sprouts and peas. Stir and cook for a minute or so more, then push it to the side and add a bit more oil, if needed. Add the rice and quickly stir to heat and toast the rice. Once a crust has formed on some of the rice, add the soy sauce and chili sauce. Season with more salt, if needed. Incorporate the rice with the rest of the ingredients in the pan. Once combined, push to the sides and add the eggs to the center, allowing the eggs to curdle lightly. Rapidly stir the rice in to coat while the eggs are cooking. The eggs act as glue instead of being left as big curds separated from the rice. Transfer to a serving bowl and serve immediately. Right Rice: Rinse the rice 3 times to remove the starch. Put the rice in a medium saucepan. Fill the saucepan with enough water to cover the rice by 1/2-inch. Or measure by putting your thumb tip on the rice and filling the pot with water until the water reaches the middle of your thumbnail. Bring the rice to a simmer over low heat, then cover and cook until tender and liquid is evaporated, about 15 minutes. Remove from heat and let the rice stand another 5 minutes, covered. Recipe courtesy of Sherri Parr Show: Diners, Drive-Ins and Dives Episode: Wings, Dogs and Claws Save Recipe Print Pinterest Facebook Twitter Email Total: 2 hr 45 min Prep: 45 min Cook: 2 hr Yield: 12 servings Level: Easy Ingredients Meatloaf:  2 pounds ground chuck 2 eggs 2/3 cup marinara 3/4 cup finely diced parsley leaves 2 teaspoons salt 1 teaspoon freshly ground black pepper 1 1/3 cups bread crumbs Wheat bread, 24 slices 12 slices pepper jack cheese Chipotle Ketchup: 2 (16-ounce) cans tomato puree 1 large onion, chopped 2 tablespoons tomato paste 2 tablespoons olive oil 3/4 cup dark brown sugar 1/2 cup apple cider vinegar 1 chipotle pepper, chopped 2 tablespoons chipotle sauce 1 tablespoon Worcestershire 1/2 teaspoon freshly ground black pepper 1 tablespoon lime juice Add Checked Items to Grocery List Success! View List Directions Preheat the oven to 350 degrees F.  In a large mixing bowl, combine the ground beef, eggs, marinara, parsley, salt, pepper and bread crumbs. Mix thoroughly and put on a baking dish. Shape the meat into a loaf and cover the baking dish. Bake in the preheated oven for 60 to 90 minutes. Uncover the last 15 minutes of bake time. Remove the meat from the oven and let it sit for 15 minutes before slicing. Slice and keep warm.  Puree the tomatoes until smooth in a blender. Cook onions in heavy pan, over medium heat until softened. Add the pureed tomatoes to the onions add all the remaining ingredients, except the lime juice. Simmer uncovered, stirring frequently, until thick, about 1 hour.  Remove from heat and let the mixture cool down a little before adding it to a blender. Add the lime juice and puree again.  Put 1 piece of sliced meatloaf on half of the wheat bread slices, add a slice of pepper jack cheese and top with chipotle ketchup. In a mini food processor, puree the olives; transfer to a bowl. Using a sharp knife, peel the orange, removing all of the bitter white pith. Working over another bowl, cut in between the membranes to release the sections. On a rimmed baking sheet, drizzle the turnips with 1 tablespoon of the oil. Roast for 20 minutes, until almost tender. Meanwhile, in a large, deep skillet, heat the remaining 2 tablespoons of olive oil. Add the onion and garlic and cook over moderate heat, stirring occasionally, until softened, 5 minutes. Add the water and turnip greens, cover, and cook over moderate heat, stirring occasionally, until the greens are just tender, 5 minutes. Season with salt and pepper. Pour the orange juice over the turnips. Roast for 5 minutes longer, until the turnips are tender and glazed; season with salt. Add the spinach to the greens; toss until wilted. Drizzle the pureed olives onto a platter. Top with the turnips, greens, orange sections, and hazelnuts. Serve hot or warm. View List Directions Place a rack in the top third of the oven and preheat the oven to broil.  Trim off about an inch from the bottom of the asparagus and peel about halfway up. Toss the asparagus with the olive oil on a baking sheet. Season with salt and pepper and broil until slightly blistered and tender, about 7 minutes. Remove from the oven and set aside.  Combine the mayonnaise, Parmesan, lemon juice and 1/2 teaspoon pepper and set aside.  Fill a straight-sided skillet with about 2 inches of water and bring it to a bare simmer over medium heat. Add the vinegar. Crack an egg into a cup and gently slip it into the water. Repeat with the remaining eggs and cook until the whites are set but the yolks are still runny, 3 to 4 minutes. Using a slotted spoon, gently scoop the eggs from the water and blot dry with a paper towel.  To serve, divide the asparagus among 4 plates, top each with a poached egg, drizzle with a quarter of the sauce and garnish with a sprig of dill.
